I find this to be a great tool when designing icons. You just drop the image file onto its Dock icon, and there it is.
Needless to say, you can drop image files in the 'documents' area of the Dock, but that's just not feeling all the same to me, as compared to the possibility of dragging around and preview the icon wherever you want.
Furthermore, there's an additional huge advantage that Dock Icon Viewer brings to the table; the image files do not need to actually have their graphics thumbnailed onto their icons first, in order to directly see the resulting icon in the Dock (which is the case with the normal method of placing icons in the 'documents' area).
