Replace the iTunes 7 default GUI with an aqua GUI similar to iTunes 6. This GUI blends itself with iLife applications just like iTunes 6 did.
Use normal or UNO style windows
Use Aqua Blue or Graphite gadgets
Uninstall at the click of a button if you want to go back to the default look.
